Cake with Any Fruit – Super Moist Quick and Easy

Again, this recipe is coming from my mum. This cake is so quick and easy to make that it would be a shame not to include it in my blog. You can do it with any fruit you just got, fresh or frozen. Enjoy!

Add all these ingredients into onw bowl:

  • 6 eggs
  • 6 tablespoons oil – sunflower oil is best
  • 2 cups of flour – I usually use the wholemeal flour or my own cassava flour (not starch)
  • 1 1/2 cups sugar
  • 1 tablespoon white vinegar
  • dash of vanilla
  • 2 teaspoons baking powder
  • 1-2 tablespoons milk –  to make the dough softer while using wholemeal

Combine until smooth. Move into a larger cake from. Sprinkle your fruit of choice with flour and place on top. Bake in the oven on low and top heat setting at about 160°C until ready – light golden and toothpick test. Sprinkle with pure icing sugar before serving. Enjoy!
