Cake with Any Fruit – Super Moist Quick and Easy

Again, this recipe is coming from my mum. This cake is so quick and easy to make that it would be a shame not to include it in my blog. You can do it with any fruit you just got, fresh or frozen. Enjoy!

Add all these ingredients into one bowl:

  • 6 eggs
  • 6 tablespoons oil – sunflower oil is best
  • 2 cups of flour – I usually use the wholemeal flour or my own cassava flour (not starch)
  • 1 1/2 cups sugar
  • 1 tablespoon white vinegar
  • dash of vanilla
  • 2 teaspoons baking powder
  • 1-2 tablespoons milk –  to make the dough softer while using wholemeal – only if needed

Combine until smooth. Move into a larger cake form. Sprinkle your fruit of choice with flour – only if very juicy – and place on top. Bake in the oven on low and top heat setting at about 160°C – 170°C until ready – light golden and toothpick test. Sprinkle with pure icing sugar before serving. Enjoy!

Tips:

  • You can use any fruit, also dry fruit and nuts.
  • Cut larger fruit like apples and nuts into smaller pieces
  • To make the cake super fluffy, simply whisk the eggs and sugar at first before adding the remaining ingredients. I rarely do this as the cake is fluffy enough when following the original recipe.
