Jam Donuts – Simple Recipe – German Doughnuts
Simple, delicious, and completely irresistible! This foolproof recipe is a healthier alternative to traditional versions because it uses nutrient-rich wholemeal flour.
- 500g flour – I usually use 350g wholemeal + 150g plain flour
- 35g fresh yeast or 3tsp dry yeast
- 60g sugar
- 250ml milk (warm)
- 4 egg yolks
- 50g melted butter
- pinch of salt
First, make a yeast starter:
Mix the yeast with about 1 tablespoon of the sugar, 1 tablespoon of flour, and a little of the warm (not hot) milk.
After about 10 minutes, knead everything into a yeast dough and let it rise for about 40 minutes. (If the dough is a bit sticky, add 1-2 more tablespoons of flour.) Then shape into 12 balls and let them rise under a clean kitchen towel for 20 minutes. Fry in fat at about 160°C (each side for about 4 minutes). Let them cool, fill with jam, and dust with sugar.
