Sponge Cake Recipe – Quick & Easy to Make

It is quick, easy to make, delicious, and perfect for an afternoon coffee or unexpected guests. This is probably the fastest and best sponge cake I ever made. The recipe is from my mum. I just changed the flour from white to wholemeal but you can use either or a mix of both. You can use this recipe for many occasions like a multi-layered birthday cake, with fruit and jelly on top, or just with jam if it has to be quick.Β 

You will find two recipes below depending on the cake tin you use.

Sponge Cake

Start with turning the oven to 170Β°C top and bottom heat.Β 

This recipe is for the round tin:

Whisk until fluffy:

  • 4 whole eggs
  • 3/4 cup of raw sugar
  • and a bit of vanilla essence

Turn the mixing machine off.

  • add one cup of flour, sieved is always best, combined with 1 tsp baking powder. Combine it all gently with a handheld whisk.Β 

Spread the entire mixture on a baking paper and bake until ready.Β

This recipe is for a large rectangle cake tin:

Sponge Cake

Whisk until fluffy:

  • 5 whole eggs
  • 1 cup of raw sugar
  • and a bit of vanilla essence

Turn the mixing machine off.

  • add 1 and a 1/4 cup of flour, sieved is always best, combined with 1 and a 1/2 tsp baking powder. Combine it all gently with a handheld whisk.Β 

Spread the entire mixture on a baking paper and bake until ready.Β 

As already mentioned, this is the basic recipe. You can transform this sponge cake into a magnificent birthday cake or, when it has to be quick, simply cut it in half, spread some jam, and ready is your cake. Enjoy!

Tips:

  1. Replace 2-3 tablespoons of flour with pure cacao and add a bit more baking powder to make a chocolate sponge
  2. Replace 2-3 tablespoons of flour with ground walnuts, and add a bit more baking powder for a delicious walnut sponge
