Christmas Honey Cookies – Gingerbread

Delicious and easy-to-make traditional German Christmas cookies. I have been asked to share this recipe so here it is! Ingredients:

  • 300g honey
  • 260g raw sugar
  • 3 eggs
  • 350g hazelnuts or almonds, slightly roasted on a dry pan and coarsely ground
  • grated lemon or lime peel
  • grated orange peel
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1 dash of ground cardamon
  • 1 dash of ground nutmeg
  • 2 cl rum or rum flavour
  • 5g baking soda
  • 500g wholemeal

Whisk eggs + sugar. Add honey and combine. Add remaining ingredients, except wholemeal and baking soda, and combine. Combine wholemeal with baking soda and add to the mix. Knead the dough thoroughly, wrap it in foil and leave for about one hour to rest. Cut in portions, thin out using a rolling pin to around 0.5cm thick slices, and cut out 5-6cm diameter rounds or shapes. Brush with egg yolk and bake at 175°C for about 15-18 minutes. Decorate with chocolate icing and/or almonds (optional). Store in an air-tight container. The honey cookies taste best after resting for a few days.

Chocolate icing: melt 100g dark chocolate with 1 tbsp of sunflower oil in a hot water bath to decorate your cookies after baking.
